Summer is around the corner and I couldn’t help but put together some color coated ideas that have been swirling in my head. This is a cake idea that is easy, fast and healthy. I used a small watermelon that you carve into the shape of a cylinder, slather on canned coconut cream and decorate. That’s it, really. It’s sweet, refreshing and great for kids. Plus it caters to almost any diet: vegan, gluten-free, diary-free, sugar-free, paleo, fruitiarian, locavore, etc. You can add a little more sweetener to the coconut cream if you like but it is plenty sweet as is, in my opinion. Another decor idea are dried fruit chips by Natural Sins. Blood oranges are always beautiful and add an interesting flavor twist to this all fruit cake.
